We weren’t quite sure what to make for dinner last night but then realized we had all the components we need to throw a brinner together! We did our favorite tofu scramble from this bowl recipe (though we didn’t do turmeric for color) and a modified version of these pumpkin cornbread waffles (removed extra brown sugar).
We’re nearly out of Thrilling Bakon, we didn’t have enough tofu, but we did have some tempeh, so decided to try this new-to-us bacon recipe, also by Minimalist Baker.
We did make two modifications:
- Reduce the maple syrup 40% to 1½ Tbsp per 8 oz tempeh (sorry MB, your recipes are always sweeter than we like!)
- As we always do, steam the tempeh for 12 minutes before marinating to improve the texture and absorption

It was very tasty! Only issue we ran into was that the baking sheet was just warped enough a lot of marinade dripped to one corner and burned on, which was annoying to clean.
