Mix:

โ€ข ๐Ÿฅซ 1 tin chickpeas
โ€ข ๐Ÿง… 1 red onion
โ€ข ๐Ÿ… Handful tomatoes
โ€ข ๐Ÿฅ’ 1 diced cucumber
โ€ข ๐ŸŒฑ Fresh coriander

Extra protein: ๐Ÿ— chicken, ๐Ÿฒ tofu, or ๐Ÿฅš eggs.

Dress:

โ€ข ๐Ÿซ’ 2 tbsp olive oil
โ€ข ๐Ÿ‹ 1 lemon

๐Ÿฅ› 60ml almond milk
๐ŸŒฑ 240g spinach
๐Ÿง€ 115g feta
๐Ÿ… 60g cherry tomatoes
๐Ÿซ‘ 60g bell peppers
๐ŸŸก Turmeric pinch
๐Ÿง‚ Salt, pepper
๐Ÿถ 1 tbsp olive/coconut oil

๐Ÿ”ฅ Preheat to 190ยฐC. Whisk eggs, milk, spices. Sautรฉ spinach; add to mix with cheese, tomatoes, peppers. Fill muffin tin 3/4. Bake 20-25 mins. Enjoy warm!

Ingredients:

โ€ข 100g dark chocolate (75%+ cocoa)
โ€ข 150g mixed nuts
โ€ข 50g chia seeds
โ€ข 75g desiccated coconut
โ€ข Pinch of salt
โ€ข 1 tsp vanilla

Directions:Blend nuts. Melt chocolate & mix with the vanilla. Combine all, shape into balls, refrigerate for 1hr. Store in fridge.
