Everything I hated when I was young, I still hate.
I mean, I hated liver, strawberries, honey, and I still hate them (Honey, I think becasue it was associated with taking pills for travel sickness).
Am I alone in this? Or strange (I know I am, but in this context).
There were many thinks I love now that I never had when I was younger - it took a long time to develop my palate. But that is different.

Carlo Cracco ha lasciato MasterChef Italia nel 2017, dopo sei stagioni di successo come giudice. La decisione era stata presa “per dedicarsi a nuovi progetti professionali”. Lo chef ha presentato a Il Corriere della Sera il suo ultimo libro “Cracco in Galleria”, scritto insieme a Gabriele Zanatta e Luca Sacchi. Durante l’intervista lo chef ha ricordato la sua esperienza con il cooking show di Sky.
“Antonino Cannavacciuolo è un gigante, in tutti i sensi. – ha spiegato – Era proprio quello che mancava in trasmissione. Ha aggiunto il colore e il calore. Com’ero in tv? Il giudice era un ruolo, una parte. La persona è un’altra cosa”.
Il pensiero va alla nuova generazione di aspiranti chef: “Gli obiettivi dei ragazzi devono essere di lungo respiro. Ognuno fa la scelta che ritiene più corretta. La stella Michelin è solamente una certificazione. Ma è sempre il lavoro a dover essere centrale”.
Infine sulle polemiche scoppiate per la pizza del suo locale in Galleria Vittorio Emanuele II a Milano: “Il cuoco non è solo quello che fa piatti indimenticabili o personali. Quella del cuoco è una professione che abbraccia tutta la cucina. E la pizza che è una specialità iconica. Normale che rientrasse nell’offerta del bistrot”. Le polemiche erano nate soprattutto per il prezzo fino a 22-45 euro e per la “rivisitazione stilistica” del piatto famoso in tutto il mondo.

A chef’s profession encompasses the entire kitchen. And the pizza, which is an iconic specialty. It’s normal for it to be part of the bistro’s offering.” The controversies had arisen primarily due to the price of 22-45 euros and for the “stylistic revision” of the world-famous dish.
