I've been making my own masala chai (spiced tea, मसाला चाय) from this Nik Sharma recipe, using his chai masala (tea spice) recipe with a few modifications. Spice blend: * 1 tsp ground ginger * 6 green cardamom pods * 3 whole black peppercorns * 3 whole cloves * ½ tsp whole fennel seeds

Husband gave me a beautiful marble mortar and pestle for Christmas!
Made my first masala chai from a Nik Sharma recipe today. I left out a clove and doubled the milk, it is good, but I think it could be better. The flavour was really improved by just a little sugar.
The next experiment will add nutmeg and some garam masala from Penzey's.
