More on Floktoberfest. Out of the 16-ounce can, Floktoberfest produces a blanket of shaving cream-white head, as dense as a winter comforter, resting on a clear pool of copper. Receding, the defiant blanket of lace remains.
Swirling and sniffing, we recover notes of honey, cooking herbs, some spiciness, and a bit of woodsiness.
Sipping, many of the same notes are present, along with some herbal bitterness, a bit of caramel sweetness, and finishing again with some woodsiness. Overall, Floktoberfest has a medium mouthfeel, some alcoholic warmth, and a lingering bitterness with herbal notes.

Transferred my Märzen from the short dip tube corny keg where it has been lagering for 136 days now (brewed on the equinox) to give it time to settle before having some friends over later in September. This is from nearly the bottom of the lagering keg so it is a bit cloudy. But tastes perfect.

Here's a retrospective thread on my brewday. I made a nice, oldschool, double-decocted Märzen today and I am going to use open fermentation and a six week lagering period to make it beautifully smooth and malty 😋

Change of plans.

I am going to make the Märzen on Thursday. My family decided that they want something darker and stronger for Christmas Eve. And I agree with them.

Also Märzen should be a more forgiving style than Pilsner, so I can treat this like a dry run for all the new stuff I want to try (Decoction, closed transfer to the lagering bucket, lagering for six weeks) before I ruin the Pilsner with it.

First sample of the Märzen at 42 days of lagering. Looking and tasting great. Have a few litres in this small keg for just this purpose while the main keg sits in the lager fridge until end of September.
