So what’s the right alternative for MAMP? Something simple to use. For macOS. Preferably without screw-you licensing.

joachimAnother day, another WTF. Yesterday, #MAMP completely fubar on my machine. Today, expecting hours of frustration trying to fix it, and it just works. Learned my lesson though: the configuration folders are now under version control, so I can track and revert any tweaks I make that might break things.
