My partner reminded me this morning that i'm resting aggressively today. Not something i've been doing so well the last few. So i made myself a very low key breakfast that I love.

You may or may not love savoury Chinese custards, but i sure do. This is a very low spoons meal that can be cooked in the microwave in about 5 mins. I do like to strain my eggs because I have sensory issues, so smooth eggs are my friend.

I recommend making this with hondashi which you can find at most Asian groceries, but I'm sure it's still delicious with chicken or veggie broth. Such a soothing meal.

We ran out of maple syrup so i subbed a little golden syrup instead and had this with some leftover rice with leftover carrot ginger dressing.

Dinner tonight hit every spot. What I love is how so low-effort it is. Just have to be patient and let the roast cook aaaaaaaaaaaall day.

1. Whole grain crackers, cheddar
cheese or nut butter, apple

2. Dried apricots, blue cheese and toasted almonds. (Yes, they are pricey, but if you are privileged to have a bulk section in your grocery store, a handful is still fairly reasonable. I really like tamari almonds if you can find them) Most dried apricots have a little slit in the side they were pitted. Just stuff a little of both into the apricot pouch. This travels really well and is a beloved hiking snack.

3. Peach or melon slices wrapped in ham, salami or prosciutto. Even better with a leaf of basil or mint tucked in there. Peaches with nooch and basil if you are vegan. Yeah, you can even use canned peaches in a pinch.

4. A handful of good olives, and some slices of red bell pepper.

5. A hard boiled egg cut in half with a smear of mayo, and some salt, pepper and a dab of Sriracha. Capers if you're fancy.

Getting fed shouldn't suck.

I cannot express to you how much I fucking love gluten free instant oatmeal with dried raspberries in it

It's even vegan! You can get it organic! The berries make it look and feel like it's nutrition! It's pink! It takes a minute and it's warm and comforting and filling and all I need to do is boil a bit of water. Amazing!

Post flu shot & feeling like crap, I made one of my favourite #lowSpoonMeals on Monday. I love homemade #latkes even more than I love Scottish potato pancakes (please don't tell my long departed grandmother). Grating potatoes and squeezing them out and frying them up feels like a huge amount of work when I'm having a flare. This is my lazy solution to get the flavours I want and seemed seasonally appropriate as well.

Lazy Almost Latkes

Premade hash brown patties (I like them in the air fryer best because I set a button and forget about it, but you do you. A toaster oven is a great one too.) Make sure your hash brown patties don't contain tallow if you are kosher or veg, they occasionally do.

I top them one of two ways...

1. Lox, sour cream, capers and red onion.

I sometimes mix everything but the lox all together with a little garlic, lemon, salt and pepper if I'm feeling the energy. You can also use candied salmon or hot smoked salmon if you can't get lox. It's still tasty!

2. Sour cream and apple butter or apple sauce.

The whole thing usually takes about 10-12 minutes to pull together.
