I enjoy cooking, but I have fine motor skill deficit- at least that's the medical diagnosis, in common terminology, I'm a klutz.
As a klutz, I injure myself in the kitchen, and I'm afraid of cutting myself, which is why I need a sharp knife. Sharp knives result in less injuries.
I've tried various knife sharpeners, from the kind you slide your knife in, to the big blue stone you have to soak in water, to the blocks made of metal. The slidey kind don't work for me, and I don't have the dexterity to use the blocks.
What has worked for me is the Horl knife sharpener. It's the first knife sharpener that I've used that just worked for, no complications.

The big downside is price; it's a very expensive knife sharpener for sure. I'm not getting any compensation for recommending it, but it's the only knife sharpener I've ever used that has given me good results.
