It’s time to get the #grill fired up, but first ….
I have been thinking about how to cook a steak with TNT.

My first conclusion is that it’s a bad idea if you are using really tender grass-fed #beef because the blast wave will shred it. But there are plenty of other cuts that need tenderizing and also require less control of the heat. Let’s designate those “alt-steak” for now.

Since the blast wave is traveling at supersonic speeds, you will have to rotate the alt-steak on a spit with enough velocity to expose the entire surface to the blast wave before it passes. That speed can be calculated. No doubt that optimizing the size the steak and the choice of explosive will help with predictable cooking.

The next challenge is the heat. Cooking a steak rare to medium-rare should not be hard, and you’ll have a good crust. Bye-bye grill marks, hello blast marks!

But there are some downsides. For example, blast-cooking will not be something you can do (more than once) on your patio…

I follow regular recipes, but then freehand the glaze because I don't have mirin anyway (and it's sugar), so it's miso, vinegar, soy sauce/salt, and yesterday I added MSG for the first time.
An interesting observation is, this food fools my non-vegetarian body into contentment with a vegetarian meal better than anything tried before. Unlike, say, lentil patties that I expected to see this effect from.
