Gnocchi-Auflauf mit Spinat, Räuchertofu und Champignons

Karine kocht: 2 Packungen Gnocchi à 400 gr 4 min in Salzwasser kochen, abgießen, in eine Auflaufform geben, mit etwas Öl vermengen und bei 190° Umluft 12 min backen. 500 gr frischen Spinat im Wok mit etwas Öl erhitzen, bis er zusammengefallen ist, leicht salzen. 300 gr Champignons in Scheiben schneiden und in etwas Öl kräftig anbraten. 1 Räuchertofu in kleine Würfel schneiden und in etwas Öl kross braten. 2 gewürfelte Zwiebeln in etwas Öl anbraten, mit 300 ml Brühe ablöschen, 1 Becher Pflanzensahne unterrühren, mit Salz, Pfeffer und getrockneten Kräutern würzen und kurz aufkochen. Vorgebackene Gnocchi mit Spinat, Champignons und Räuchertofu in der Auflaufform mischen, Zwiebel-Pflanzensahne-Soße darübergeben und bei 200° Umluft 15–20 min überbacken.
