I present the open source whopper v4.0:

1. 130g of cheap 90/10 beef, formed by hand into balls, then smashed + par frozen. Cook on a griddle or grill, and season with S/P/MSG on one side after flipping.
2. McGavins 5 inch burger bun, or Fournee Doree brioche sesame buns (not too dense, not too fatty)
3. Add a pinch of citric acid to 4-6 hamburger slice pickles.
4. Shaved onion, tomato, and shredduce.
5. Dress to your liking (whopper style pictured here).

It’s Fat / Pancake / Shrove Tuesday so I’m making Eierpfannkuchen for dinner.

Simplest recipe: 2 eggs, 1 cup milk, 1 cup flour. Pinch of salt, pinch of sugar.

I’m just getting started in the pancake mines.

Our oven bottom burner is broken. It’s going to be painful dealing with our property manager to get fixed.

But it does have me thinking about the Anova Precision Oven.

Anyone have first hand experience with it or something similar — countertop convection + steam?

Anova Precision™ Oven

Made lard by rendering pork fat in a crock pot (middle jar, white).

I added in 6 yellow onions and let that cook overnight (jar on the right).

The first jar on the left is the broth + fat I scooped out of the onions.

@gavcloud so great!

I’m still loving maintaining my #FoodWiki with TiddlyWiki but I’m a little bit stuck.

I publish it to flat files https://foodwiki.bmann.ca because I wanted it to be easier to be crawlable / searchable but I lose a bunch of the fluidity of TW.

I should probably switch back to “native” TW format. Editing / using with Quine on iOS is pretty great. Still need to figure out images.

I’d like to join a Community Supported Agriculture (CSA) subscription in Vancouver this year.

It would be great to have a pick up location that’s walkable from Commercial Drive at East Hastings, although I could use my ebike too.

I had started gathering some links a few years ago on the #FoodWiki

https://foodwiki.bmann.ca/Community%2520Supported%2520Agriculture%2520in%2520Vancouver.html

Please use the tag #VancouverCSA and include a link to any CSAs you know about.

Mapping pick up locations would be an interesting project too.

Welcome to #CoSocialCa @daffl! David and I caught up last night at #DWebYVR

He is a fan of food so I will point him at my #FoodWiki hashtag

David is a musician, you can check out his latest album The Song of Trees on #bandcamp https://hemnetjer.bandcamp.com/album/the-song-of-trees

Looking forward to some co-cooking and garden dinners this year! I missed his famous home made pretzels!

Bread is complete. I’ll let it cool, wrap it, and see how it tastes for breakfast tomorrow.

The “no knead” technique was first widely shared in 2006 in the NY Times Cooking section.

Here’s my entry for it in the FoodWiki.

Chad and his wife Kumie gave me a bit of their family miso back in June, in a container in this bag with instructions.

And: おいしくなった, roughly translated as “it will have become delicious”

It is delicious! Thank you friends!
