i'm experimenting with making falafel from scratch, and i reckon i've had such a wide variety of textures, colours, and flavour profiles over the years that i don't really know what i'm chasing

do you have an opinion on what makes a great falafel great? or do you know a food writer who does?

I really like homemade #falafel, but the planning tends to be an issue.

Thursday: eating at home tomorrow, I need to soak chickpeas.
Friday: zombies ate my brain (the zombies were three in office days with big commute in a row)
Saturday: crap, not eating at home today or tomorrow, better throw those chickpeas in the freezer.
Monday: did I remember to get the chickpeas out of the freezer? Guess I’ll get them out for tomorrow then…
Tuesday: sad herbs, but they can be used.

Ich frag mich grad, wieso zum Geier ich mich immer ewig an die Fritte gestellt hab um Falafel zu machen.

Heute hab ich die im sitzen gebaut, in den Airfryerkorb gelegt und 11min später waren direkt 16 Stück zeitgleich fertig. So viel besser - und nix stinkt nach Fett.

Gegessen werden sie dann in Wraps mit Hummus, Salat, Tahinsauce, Karotte etc, was Mensch halt so will und Zack: alle satt & glücklich 😁
