My (catching-up) cocktail pie for August: Rusty Nail Galette.
A Rusty Nail contains Scottish whisky and Drambuie.
My pie is a Drambuie shortcrust galette with a honey-peach filling, topped with a butter whisky syrup.
The peaches are summery but the warm spices have helped make this one feel slighly more attuned to our present season!

The Rusty Nail:
2oz Scotch (Dewar White Label)
1oz Drambuie
Combine both ingredients in a mixing glass with ice. Strain with Julep into rocks glass and garnish with lemon.
The Kingston Club
1.5oz Drambuie
1.5oz pineapple juice
0.75oz lime juice
1 teaspoon Fernet Branca
Soda water
3 dashes angostura
Orange peel for garnish
