A student asked me for recommended reading on early interactions between Christians and Muslims. I have LOTS of suggestions! In particular, I remember being asked to review the second edition (2020) of Hugh Goddard's A History of Christian-Muslim Relations (first published 2000) for Medieval Encounters. Since Goddard did not revise the discussion of the premodern period in light of twenty years of scholarship, I enjoyed citing many new works showing how the field has changed!
