Done! Woot!
Eleventh year of canning done! 120lbs of romas resulted in 35 litres of tomato sauce. Canning is such an intense weekend; however I am getting more efficient at it and it is less taxing than it used to be. The rings will come off this afternoon and then into boxes to be enjoyed all winter. Delicious batch! Enjoyed the extra on pasta for lunch!

I’ve been doing a bunch of canning this summer. I’m now using the lids we bought during the height of the pandemic when they were difficult to find (and expensive). In almost every batch I’ve done, one jar does not seal. 😢😠 Is anyone else finding this to be a problem? There’s a lot of work that goes into each jar, and sweat come to think of it.
