Distinguishing Bitterness: Western established terms

sharp bitter - quinine tonic-like
clean, short - often connected to Caffeine
sweet-bitter - similar to cocoa nibs
metallic bitter - sheng cha with very dry storage
burnt bitter - over-roasted oolong
bitter + astringent - over brewed tea or processing error
