Made another batch of bagels, doubled up the recipe, and used Saf-Instant Gold.

Much better rise than the Albertsons store-brand yeast I used for the first batch.

They smelled delicious. The one I ate was delicious. But they didn't rise very well after forming rings.

I suspect that the store-brand yeast I got just didn't have a whole lot of staying power. Might go better when I get some Saf-Instant Gold again.

Nonetheless, homemade bread of any kind is very good.

Good bagels just aren't easily available here, so I'm learning to make them myself. This dough was dry and I didn't form it well, hence the "cracking". But the color came out well, and they smell great. #bagel
