1st experiment with sweet potato pastry was a success. This was half a medium sweet potato, mashed with a little butter, salt and pepper (all I can tolerate at the moment) and about a tablespoon of 100% rice flour (nothing added to it.)
Kneaded dough briefly, then pressed into a greased muffin tray (silicone) and baked for 12 mins, then turned upside down, so the bottom could crisp up.
