So, it was my turn to make the meal for dinner tonight, and my girlfriend suggested enchiladas.

Now, I've never made enchiladas before...but I have eaten a few, so I decided to wing it and see what happened.

So here ya have it 💁🏼‍♀️ wild rice and bean enchiladas, with poblano peppers, cheddar, spinach, corn, tomatoes, spices, and salsa. Topped with more cheese, avocado, cilantro, and (not pictured) sour cream.

I thought this would be enough for like 6 people, but three of us finished it all off 😋
