*Requests by my son - Afghan macaroni*

This dish is still quite new to us but made it straight into our list of favourites so I was not surprised at all that my son asked for this.

It’s basically pasta with a tasty tomato sauce - but made very special by the lemony quark sauce it’s resting on.

The quark could be easily replaced by a thick Greek style yoghurt. The kidney beans in the sauce are barely noticeable which is a good thing in my book 😅

The last three days we had meals inspired by several cuisines: Ukrainian/Russian and German, Afghan, and Japanese.

We started with Pelmeni (dumplings, filled with minced meat) and German Maultaschen (bigger dumplings, filled with meat and vegetables) served in a crème fraîche sauce. I based this on my German Maultaschen recipe but I used spicy Italian Pancetta and blanched julienned Kohlrabi leaves to make it somewhat different.

We did another run of the Afghan pasta dish with the quark sauce and it was really, really good again.

Today we had sweet and savoury meat tofu with Donburi sauce on Japanese rice, accompanied by shredded Napa cabbage, kimchi from a tin, spring onions, sesame seeds and a sprinkle of Tekka Miso. By accident I defrosted smoked tofu but I think it worked even better than the natural version.

An Afghan Macaroni dish, recipe by Ramin who runs a cooking channel on another platform - I’ve been eyeing up his fantastic food for a while now 🤩

I think I never prepared Afghan cuisine before and I would have never expected the first one to be a pasta dish 🤣 We really liked this one a lot, the lemony quark cream as a first layer on the plate made it really refreshing. Next you add the pasta shells and then the meaty tomato sauce (the sauce was like a chilli with kidney beans). On top you put a little homemade turmeric/garlic oil, dried mint and chopped fresh coriander. The coriander simply shone on it. I didn’t even notice the kidney beans (not a big fan 😅), it was that good!

It’s easy to make and there is a written up recipe in German on Ramin’s video post. If you would like an English version of this, see below, I made one for my own recipe notes.

Since I’m cooking Indian food a lot, this wasn’t a challenge at all, we always have chilli, turmeric, ground coriander, fresh coriander and dried mint in the house. But I had to get lactose free quark because that’s where I draw a line for my slight lactose intolerance.

So, just for something different and fun, I've decided to go round the world from A-Z and cook a vegan or veganised dish from each country. To kick off this week, A for Afghanistan, and a Kabuli Pulao. It would normally have lamb in it, which I substituted with tempeh marinated in soy and mirin. The whole thing was delicious!
