It's March, and my mustard (and lettuce) has already started bolting. The mustard is a brown mustard called 적갓 (jeokgat) which is frequently used for pickling. Hoping to slow its roll a bit, I picked the buds which taste like a tender broccoli dipped in a really pungent mustard sauce and I'm only sorry there aren't more buds to snack on.
